Nutrient content in plant-based protein products intended for food composition databases

چکیده
The concern about the impact of food consumption on climate change has emphasized importance a plant-based diet to reduce animal products. Various alternatives are introduced market substitute products that known as source protein. This study focused nutrient analysis 58 with protein derived from egg white, mycoprotein, pea, soy, combination pea and wheat. were divided into groups such cold cuts, minced, pieces, sausages, minced balls, tofu seitan. collected Danish based current purchasing trends purpose including data in Food Composition Database (FRIDA). Protein was most abundant macronutrient (6.6−33 g/100 g), followed by carbohydrate (0.6−18 fat (2.1−14 g/100), contributing energy value 412−963 kJ/100 g analysed results included amino acids fatty composition, content vitamins minerals indicated these contain wide range nutrients, but there is need for nutritional guidance satisfy recommendations when consuming plant-protein

Procedures for Estimating Nutrient Values for Food Composition Databases
When used to assess the nutrient content of diets, recipes, or commercial food products, a nutrient database should provide a complete nutrient profile for each food in the database. Chemical analyses for a wide range of nutrients in the many foods included in a database are not always practical. Therefore, some nutrient values must be estimated. Common methods for estimating nutrient values in...

Stable isotope ratio analysis (SIRA) of the socalled bioelements (H,C,N,O,S) and the heavy element strontium is applied for food authenticity control and for geographical origin assignment of food products since about 30 years. The first official methods eg for honey and fruit juices have been acknowledged in 1978 and 1981 by AOAC. In 1990 the EU decided to install an official database for wine...
متن کاملProtein Databases
Proteins are sources of many peptides with diverse biological activity. Some of them are considered as valuable components of foods and drug targets with desired and designed biological activity. We are now entering an era rich in biological data in which the field of bioinformatics is poised to exploit this information in increasingly powerful ways. There are currently many databases all over ...
